Ingredients
  

For the Biscuits

  • 2.6 cups flour sifted all-purpose flour recommended
  • 1/4 cup flaxseed can be omitted
  • 1 tsp garlic powder can substitute with fresh garlic
  • 3/4 tsp red pepper flakes adjust to taste
  • 1 tsp black pepper
  • 1 tbsp baking powder check for freshness
  • 1 tsp salt
  • 1 cup Greek yogurt full-fat recommended
  • 2 large eggs

For the Add-Ins

  • 1.5 cups spinach, chopped fresh or frozen works
  • 1/2 cup chives, finely chopped green onions can substitute
  • 1.5 cups cheddar cheese, shredded can swap with Monterey Jack
  • 2 cups ham, diced any cooked meat can substitute
  • 1/2 cup sun-dried tomatoes, chopped omit if not available
  • 2 cups chicken sausage, cooked and crumbled can omit or replace with vegetarian options
  • 1.5 cups feta cheese, crumbled goat cheese is an alternative
  • 2 tsp basil, dried or fresh can be omitted

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Chop the spinach, chives, sun-dried tomatoes, and ham. Crumble the feta.
  • Whisk together the Greek yogurt and eggs in a large bowl until smooth.
  • In a separate bowl, combine flour, flaxseed, garlic powder, red pepper flakes, black pepper, baking powder, and salt.
  • Combine the dry mixture with the wet ingredients, folding gently until just mixed.
  • Fold in the spinach, chives, sun-dried tomatoes, ham, sausage, cheeses, and basil.
  • Lightly flour your hands and divide the thick dough into 12 portions, forming them into thick disks.
  • Arrange the biscuits on the prepared baking sheet, leaving about 2 inches between each one.
  • Bake the biscuits for 5 minutes at 400°F, then reduce the temperature to 350°F and bake for an additional 20 minutes.
  • Cool briefly on the baking sheet before transferring the biscuits to a wire rack.

Notes

Optional: Serve warm with a dollop of Greek yogurt or a sprinkle of fresh herbs for a lovely garnish.
