Ingredients
  

For the Soup

  • 2 lb Ground Beef Choose 80/20 for richness or 85/15 for leaner results
  • 4 cups Potatoes Cubed, sweet potatoes can be a substitute
  • 4 Carrots Sliced, can use chopped or baby carrots
  • 3 Celery Sliced, bell peppers can be swapped
  • 5 Garlic Cloves, minced
  • 1 cup Tomato Sauce Can use tomato paste for thicker consistency
  • 45 oz Fire-Roasted Tomatoes Regular canned tomatoes work too
  • 4 cups Beef Broth Opt for low-sodium
  • 1.5 tsp Worcestershire Sauce Soy sauce can be an alternative
  • 1 tbsp Italian Seasoning A mix of dried herbs works for flavor
  • 1/2 tsp Onion Powder Can skip if using fresh onions
  • 1/2 tsp Salt Adjust to taste
  • 1/2 tsp Pepper Adjust to taste
  • 1/4 tsp Red Pepper Flakes Can omit for a milder flavor
  • 1/2 tsp Smoked Paprika Regular paprika can be substituted
  • 2 Bay Leaves Remove before serving
  • 6 oz Tomato Paste Thickens the soup nicely
  • 1 cup Corn Other frozen vegetables can be used
  • 1 cup Peas Other frozen vegetables can be used
  • 1 tbsp Olive Oil Can substitute with vegetable oil

Instructions
 

Cooking Steps

  • In a large skillet, warm the olive oil over medium-high heat.
  • Add the diced onion to the skillet, cooking for 3-4 minutes until translucent.
  • Incorporate the ground beef into the skillet, cooking until fully browned, approximately 8-10 minutes.
  • Drain any excess grease and stir in the minced garlic, sautéing for 1 minute.
  • Prepare vegetables by cubing the potatoes and slicing the carrots and celery.
  • In the crockpot, add the prepared vegetables, fire-roasted tomatoes, tomato sauce, beef broth, Worcestershire sauce, and seasonings.
  • Gently fold the browned beef into the vegetable mixture in the crockpot.
  • Cover and cook on low for 6-8 hours or high for 3-5 hours until vegetables are tender.
  • About 15-20 minutes before serving, stir in the tomato paste, corn, and peas, cooking uncovered.
  • Just before serving, remove the bay leaves and enjoy your heartwarming soup!

Notes

Optional: Garnish with shredded cheese or a dollop of sour cream for added creaminess.
