  • 2 cups Frozen Corn Fresh corn can be used

  • 1 packet Ranch Seasoning Hidden Valley or homemade versions work
  • 1 cup Green Salsa Choose fresh or jarred based on availability
  • 3 cloves Garlic Minced fresh garlic for the best taste
  • 2 cans Great Northern Beans Drained and rinsed
  • 1 cup Heavy Cream For a lighter version, consider using half-and-half
  • 2 tablespoons Chili Powder Feel free to substitute with other chili spices
  • 2 teaspoons Ground Cumin Can replace with other spices if desired
  • 1 pound Chicken Thighs Boneless and skinless for moisture
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 4 cups Chicken Broth Low-sodium broth can be selected

For Garnishing

  • 1 large Avocado Optional for richness
  • 2 whole Limes Cut into wedges for serving
  • 1/4 cup Cilantro For garnishing; other herbs can be used

How to Make Ranch White Chicken Chili

  • Begin by dicing the onion and mincing the garlic. Season the chicken thighs generously with salt and pepper to enhance flavor before cooking.
  • Place the seasoned chicken at the bottom of your slow cooker. Next, add the diced onions and minced garlic.
  • In a small bowl, combine the ranch seasoning, ground cumin, and chili powder. Sprinkle this spice mixture over the layered chicken.
  • Pour in the green salsa, drained Great Northern beans, hatch chiles, frozen corn, and chicken broth. Stir gently to combine.
  • Cover your slow cooker and set it to LOW. Let the chili cook for about 6-8 hours.
  • Once cooked, remove the chicken thighs and shred them into bite-sized pieces, then return to the pot.
  • Increase the heat to HIGH on your slow cooker. Stir in the heavy cream and let it cook for an additional 10 minutes.
  • Before serving, taste your chili and adjust the seasoning with more salt and pepper if needed. Serve hot, garnished with lime wedges, fresh cilantro, and slices of avocado.
