Ingredients
  

For the Dough

  • 4 cups high-grade flour
  • 2 teaspoons dried yeast ensure it's fresh and active
  • 1/4 cup sugar can substitute with honey
  • 2 teaspoons ground cinnamon adjust to taste
  • 1 teaspoon ground ginger
  • 1 teaspoon mixed spice optional
  • 1 teaspoon salt
  • 1 cup milk can substitute with dairy-free alternatives
  • 1 cup warm water should be warm, not hot
  • 1/4 cup melted butter can substitute with vegetable oil
  • 1 tablespoon orange zest or use mixed peel
  • 1 teaspoon vanilla extract optional
  • 1 large egg or use egg substitute

For the Crosses

  • 1 cup flour
  • 2 tablespoons sugar
  • 1/2 cup boiling water

Instructions
 

Making the Dough

  • In a stand mixer, combine high-grade flour, dried yeast, sugar, ground cinnamon, ground ginger, mixed spice, and salt. Mix until blended.
  • In a separate bowl, whisk together warm milk, warm water, melted butter, egg, orange zest, and vanilla extract.
  • Add the wet ingredients to the dry ingredients. Knead with a dough hook for about 5 minutes or by hand for 10 minutes.
  • Gradually knead in the sultanas until evenly distributed.
  • Shape the dough into a ball, grease a bowl, and let rise in a warm spot for about 2 hours.
  • Punch down the dough, divide into 12 pieces, and shape each into a bun. Place onto a lined baking tray.
  • Brush tops with water and cover with glad wrap. Let rise for about 1.5 hours.
  • Preheat the oven to 180°C (350°F). Mix flour, sugar, and boiling water for the crosses.
  • Pipe crosses onto the buns and bake for 30-40 minutes until golden brown.
  • Brush with hot syrup and allow to cool on a rack.

Notes

Serve warm with butter for added indulgence. Leftover buns can be stored in an airtight container.
