  • 4 cups Beef Bone Broth Can mix with beef stock.
  • 2 cups Beef Stock Consider low-sodium options.
  • 1 cup Dry Red Wine Can substitute balsamic vinegar.

For the Toppings

  • 1 cup Gruyère Cheese Freshly grated for melting.
  • 4 slices Baguette Fresh, crusty variety.

  • Set your Instant Pot to sauté mode and melt the unsalted butter. Add in the sliced yellow onions, minced garlic, fresh thyme, and bay leaf. Sauté for about 5 minutes until the onions are softened and aromatic.
  • Pour in 3 tablespoons of water to deglaze the pot, scraping up any browned bits from the bottom.
  • Seal the lid of the Instant Pot and cook on high pressure for 20 minutes. Once done, release the pressure carefully following your device’s instructions.
  • Return to sauté mode again, stirring the mixture for another 5 minutes to enhance the caramelization and flavors.
  • Pour in the dry red wine and let the soup simmer for about 10 minutes. Remove the thyme and bay leaf.
  • Add the beef bone broth and beef stock into the pot. Stir thoroughly and continue to simmer on sauté mode for an additional 10 minutes.
  • Season your soup with kosher salt and ground black pepper according to your taste preference.
  • Preheat your broiler. Place baguette slices on a baking sheet and toast until golden brown. Top each slice with grated Gruyère cheese and return them to the broiler until melted.
  • Spoon the warm soup into bowls, topped generously with your cheesy baguette slices. Enjoy every cozy spoonful!
