Ingredients
  

  • - 1 lb ground turkey 85–93% lean
  • - 1 tbsp olive or avocado oil
  • - ½ medium onion diced
  • - 3 garlic cloves minced
  • - 1 bell pepper diced
  • - 1 small zucchini chopped
  • - 1 medium carrot chopped
  • - 2 tbsp chili powder
  • - 1 tbsp ground cumin
  • - 1 tsp dried oregano
  • - 1 can 15 oz tomato sauce
  • - 1 can 15 oz water or broth
  • - 1 can 10 oz diced tomatoes with green chiles
  • - 1 can 15 oz black beans, rinsed and drained
  • - 1 cup frozen corn
  • - Salt and pepper to taste

Instructions
 

  • Turn Instant Pot to Sauté. Add oil and ground turkey, onion, garlic, and veggies. Cook 7–9 minutes until turkey is browned.
  • Stir in chili powder, cumin, and oregano.
  • Add tomato sauce, water/broth, diced tomatoes, beans, and corn. Mix well.
  • Seal lid, cook on High Pressure for 8 minutes.
  • Let pressure release naturally for 10–15 minutes, then quick release.
  • Stir and serve with desired toppings.

Notes

- Deglaze well after sautéing to prevent “burn” warning.
- Use canned fire-roasted tomatoes for added depth.
- Can be doubled (do not exceed max fill line).
