For the Crust

  • 1 package Refrigerated Chocolate Chip Cookie Dough Chill before use for best texture.

For the Cheesecake Filling

  • 32 oz Cream Cheese Ensure it's softened for easy mixing.
  • 1 cup Granulated Sugar Adjust to taste.
  • 1 tsp Kosher Salt Use fine sea salt if kosher is not available.
  • 4 large Eggs Room temperature for smooth mixing.
  • 1/2 cup Sour Cream Greek yogurt can be used as an alternative.
  • 1/4 cup Heavy Cream Substitute with half-and-half for a lighter version.
  • 1.5 Tbsp Pure Vanilla Extract Choose quality extract for better results.
  • 1 cup Mini Chocolate Chips Dark chocolate chips can be substituted.

For the Topping

  • 1/4 cup Butter Margarine can be a dairy-free substitute.
  • 1/4 cup Powdered Sugar Can be omitted for less sweetness.
  • 2 Tbsp Packed Brown Sugar White sugar can be used instead.
  • 6 cookies Chocolate Chip Cookies Halved & broken for topping.

  • Press half of the refrigerated chocolate chip cookie dough evenly into the bottom of a springform pan, creating a solid base. Chill for about 10 minutes to firm up.
  • In a large bowl, beat together the softened cream cheese, granulated sugar, kosher salt, and eggs (one at a time). Then blend in sour cream, heavy cream, and vanilla until silky smooth.
  • Gently fold mini chocolate chips into the creamy cheesecake mixture, distributing them evenly.
  • Spread the cheesecake mixture over the chilled cookie crust smooth and evenly.
  • Cover the springform pan with plastic wrap and refrigerate for at least 7 hours, or preferably overnight.
  • In a mixing bowl, beat the remaining cream cheese and butter until fluffy. Gradually add powdered sugar, brown sugar, vanilla, and salt; mix until smooth.
  • Spread the topping over the cheesecake, then scatter broken chocolate chip cookies and extra mini chocolate chips on top.
  • Slice and serve chilled, enjoying the delightful layers.

Notes

Allow the cheesecake to chill for at least 7 hours—overnight is even better to let the flavors meld.
