Ingredients
  

For the Squash

  • 2 lb Patty pan squash Slice them in half to reveal their beautiful insides.

For the Seasoning

  • 2 tbsp Olive oil Adds richness and helps caramelize.
  • 1 tsp Sea salt Enhances natural sweetness.
  • 1/2 tsp Black pepper Adds a subtle kick.
  • 2 tsp Italian seasoning Optional, adds aromatic depth.
  • 1 tsp Garlic powder Optional, infuses with garlic essence.
  • 1/2 tsp Crushed red pepper flakes Optional, adds warmth.

Instructions
 

Preparation

  • Preheat the oven to 450°F (232°C).
  • In a large bowl, combine patty pan squash with olive oil, salt, pepper, and optional seasonings. Toss to coat.
  • Place the seasoned squash cut side down on a baking sheet in a single layer.
  • Roast for 15-20 minutes until tender and golden brown, stirring halfway through.
  • Heat olive oil in a large skillet over medium-high heat. Sear the squash cut side down for 3-5 minutes until golden, then flip and repeat.
  • Preheat the grill to medium-high for at least 10 minutes.
  • Toss the squash with olive oil, seasonings, place cut side down on the grill, and grill for 3-4 minutes per side.
  • For air frying, coat the squash with olive oil and seasonings, place cut side down in the air fryer basket, and air fry at 400°F (204°C) for 10-12 minutes.

Notes

Add a sprinkle of Parmesan cheese before serving for a delightful finish.
