  • Sauté Onions: Add unsalted butter to the bacon fat and melt it. Then, toss in diced yellow onion, cooking until soft and translucent, about 3-5 minutes.
  • Add Garlic: Stir in minced fresh garlic and cook for 30 seconds until fragrant—avoid browning.
  • Make the Roux: Sprinkle all-purpose flour over the onion-garlic mixture and stir for 1-2 minutes to create a roux.
  • Incorporate Liquids: Gradually pour in chicken broth and whole milk, stirring continuously until smooth.
  • Add Cream and Potatoes: Stir in heavy cream, salt, and ground pepper, followed by the Yukon Gold potato chunks.
