  • Preheat the oven to 350°F (175°C).
  • Grease a cake pan with cooking spray and optionally line the bottom with parchment paper.
  • In a large bowl, whisk together all-purpose flour, almond flour, baking powder, baking soda, and salt.
  • In another bowl, cream the softened butter with granulated sugar and brown sugar until light and fluffy, about 2-3 minutes.
  • Beat in the eggs, vanilla, and almond extracts until well combined.
  • Gradually add the dry mixture to the wet ingredients, alternating with buttermilk, mixing until just smooth.
  • Gently fold in the sliced rhubarb, saving some for the topping.
  • Pour the batter into the prepared cake pan and smooth the top with a spatula.
  • Scatter the reserved rhubarb on top and sprinkle generously with sugar.
  • Bake for 60–75 minutes, checking for doneness with a toothpick.
  • Let the cake cool in the pan for about 10-15 minutes, then transfer it to a wire rack.
