For the Peach Layer

  • 8 medium Fresh Peaches, sliced (about 4-5 cups)
  • 1.25 cups Granulated Sugar divided; adjust to taste

For the Topping

  • 0.75 cups White Whole Wheat Flour or all-purpose flour
  • 0.5 cups All-Purpose Flour
  • 2 teaspoons Baking Powder aluminum-free
  • 0.5 teaspoon Baking Soda
  • 0.25 teaspoon Kosher Salt

For the Richness

  • 0.5 cups Unsalted Butter (1 stick), cut into thin slices

Preparation

  • Slice the 8 medium ripe peaches and layer them evenly in the bottom of your crock pot.
  • In a separate bowl, whisk together 1 cup of granulated sugar, ¾ cup of white whole wheat flour, ½ cup of all-purpose flour, 2 teaspoons of baking powder, ½ teaspoon of baking soda, and ¼ teaspoon of kosher salt.
  • Evenly distribute the flour and sugar mixture over the layered peaches.
  • Slice ½ cup of unsalted butter into thin pieces and scatter them on top of the mixture.
  • Place a paper towel over the top of the crock pot and secure the lid.
  • Set your slow cooker to high for 2-3 hours or low for 4 hours.
  • Scoop out the cobbler while it’s still warm and enjoy it topped with vanilla ice cream or heavy cream.

Notes

Optional: Add a sprinkle of cinnamon for a comforting twist. Store leftovers in an airtight container for up to 3 days in the fridge, or freeze for up to 2 months.
