Ingredients
  

For the Chicken

  • 4 pieces boneless skinless chicken breasts
  • 1/2 cup sweet chili sauce substitute with a mix of honey and sriracha for personalized flavor
  • 1/4 cup soy sauce can be replaced with tamari for gluten-free
  • 3 cloves garlic fresh minced or garlic powder

For the Sauce

  • 1 cup chicken broth any low-sodium chicken stock works well
  • 2 tablespoons rice wine vinegar white vinegar can be used as a substitute
  • 1/4 cup brown sugar substitute with coconut sugar for healthier variant
  • 2 tablespoons lime juice lemon juice is a great alternative

For Serving

  • 2 cups steamed rice
  • 1/4 cup fresh cilantro omit if not preferred
  • 1/4 cup crushed peanuts

Instructions
 

Making the Sticky Chicken Bowls

  • In a medium bowl, whisk together sweet chili sauce, soy sauce, garlic, chicken broth, rice wine vinegar, brown sugar, and lime juice until smooth.
  • Reserve 1/2 cup of the sauce. Marinate chicken breasts in the remaining marinade for at least 30 minutes.
  • Heat the reserved sauce in a small saucepan over medium-low heat until thickened, about 15 minutes.
  • In a cast iron skillet, sear the marinated chicken on both sides until cooked and caramelized, about 6-8 minutes per side.
  • Let the chicken rest for 3-5 minutes, then slice for serving.
  • Serve the sliced chicken over steamed rice, drizzle with sauce, and garnish with cilantro and peanuts.

Notes

For added zest, serve with lime wedges on the side.
