Preparing the Lemon Bars

  • Whisk together the all-purpose flour, powdered sugar, and sea salt in a bowl until well combined. Melt the unsalted butter and mix it with the vanilla extract, then stir this into the dry ingredients until a greasy dough forms. Press this mixture into an 8x8-inch baking pan lined with parchment paper and bake at 350°F for 18-20 minutes, or until lightly golden brown.
  • In a separate bowl, combine the granulated sugar with the lemon zest to release the fragrant oils. Gradually whisk in the flour, then add in the eggs and fresh lemon juice. Mix until the filling is smooth and well integrated.
  • Carefully pour the luscious lemon filling over the hot crust, spreading it evenly. Bake for 20-25 minutes or until set—there should be no jiggle when you gently shake the pan.
  • Allow your lemon bars to cool at room temperature for about 1 hour. Afterward, refrigerate them for at least 2 hours to achieve a perfect texture before slicing.
