  • Sanitize Jars: Wash canning jars, lids, and bands, then place in simmering water.
  • Blanch Peaches: Blanch peaches for 45 seconds in boiling water, then transfer to ice-cold water.
  • Chop Peaches: Peel, pit, and finely chop peaches to yield 4 cups.
  • Combine Ingredients: In a saucepan, combine peaches, lemon juice, and honey.
  • Boil the Mixture: Bring to a rolling boil, stir in pectin, and boil for 1 minute.
  • Jar the Jam: Ladle the mixture into jars, filling to within ⅛-inch from the top.
  • Process the Jars: Boil jars for 10 minutes to seal.
  • Cool and Store: Remove jars to cool on a towel and check seals.
  • Final Wait: Let jars stand at room temperature for 24 hours.
