How to Make Juicy Bourbon Glazed Salmon Bites

  • In a small saucepan, mix soy sauce, light brown sugar, honey, and gochujang over medium heat. Stir until the sugar dissolves, which should take about 1-2 minutes. Add bourbon and bring to a gentle simmer, reducing for 5-7 minutes until thickened.
  • In a separate bowl, mix toasted sesame oil, ponzu, and soy sauce. Fold in the sliced green onion and diced red bell pepper; set aside for a fresh topping.
  • Pat the salmon cubes dry with paper towels. This step is crucial for achieving a lovely sear on each bite as it removes excess moisture.
  • Heat a griddle or skillet over medium-high heat. Add a drizzle of sesame oil, then add the salmon cubes (you may need to do this in batches). Cook undisturbed for 2-3 minutes to achieve a golden crust. Flip them over and cook for another 1-2 minutes until cooked through.
