How to Make Kentucky Derby Bars

  • Preheat your oven to 350°F (175°C). Line a 13×9-inch baking pan with aluminum foil, making sure the foil extends over the sides. Give it a good spray with nonstick cooking spray and set it aside.
  • Whisk together the flour, confectioners' sugar, and salt in a large bowl. Use a pastry blender to cut in the softened butter until the mixture resembles sand. Transfer this mixture to your prepared pan and press it firmly into the bottom. Bake for 15 to 18 minutes or until it’s lightly browned around the edges.
  • Combine the brown sugar, dark corn syrup, melted butter, and eggs in the same large bowl. Whisk until everything is well mixed. Then, gently fold in the chopped pecans and semisweet chocolate chips, creating a rich filling.
  • Pour the chocolatey mixture over the partially baked crust, spreading it out evenly.
  • Bake for 35 to 40 minutes or until the center is set and no longer wobbly. Let the bars cool completely on a wire rack, then chill them in the refrigerator until firm.
  • Remove the bars by lifting them out using the excess foil as handles. Cut them into squares and store in an airtight container for up to 5 days.

Notes

Optional: Drizzle melted chocolate on top for an extra touch of sweetness. Store in an airtight container to maintain freshness.
