Ingredients
  

  • **For the soup:**
  • - 1 lb ground beef
  • - 3 garlic cloves minced
  • - ½ yellow onion diced
  • - ½ tsp garlic powder
  • - ½ tsp onion powder
  • - ¼ tsp dried basil
  • - ½ tsp dried oregano
  • - 1 tsp kosher salt
  • - Black pepper to taste
  • - 14 oz crushed tomatoes
  • - 32 oz chicken broth
  • - 1 cup water
  • - 2 tsp tomato paste
  • - 6 oz lasagna noodles broken into pieces
  • - 1 cup frozen spinach
  • - ¼ cup heavy cream
  • **For serving:**
  • - 4 oz mozzarella slices
  • - Ricotta cheese
  • - Parmesan cheese optional

Instructions
 

  • Brown ground beef in a large pot. Drain grease.
  • Add garlic, onion, and spices. Cook 5 minutes.
  • Stir in tomatoes, broth, water, and tomato paste. Add noodles. Simmer 10 minutes.
  • Add spinach and cream. Simmer 5 minutes more.
  • Place mozzarella in serving bowls. Ladle soup on top. Add ricotta and Parmesan.

Notes

- Use penne or rigatoni if out of lasagna noodles
- Add extra broth when reheating leftovers
- Swap in sausage or turkey for variation
