  • Preheat your oven to 425°F (220°C).
  • In a large bowl, combine halved baby potatoes with olive oil, garlic powder, paprika, salt, and pepper. Toss gently until evenly coated, then spread them out on a baking sheet.
  • Place the baking sheet in the oven and roast the potatoes for 20 minutes until golden brown and crispy.
  • In a separate bowl, toss broccoli florets with olive oil, salt, and pepper. After 20 minutes, add the broccoli to the baking sheet and roast together for an additional 15-20 minutes.
  • Meanwhile, in a skillet over medium heat, melt the butter. Add minced garlic and sauté for one minute until fragrant, then mix in fresh lemon juice, salt, and pepper.
  • Add the salmon fillets to the skillet, skin-side down. Cook for 4-5 minutes, then flip and cook for another 3-4 minutes until flaky.
  • Arrange roasted potatoes and broccoli on plates, place the salmon on top, and drizzle with the lemon butter sauce. Garnish with lemon slices and parsley.

Notes

For best flavor, marinate the salmon in lemon juice and garlic for 30 minutes before cooking.
