  • Scrape the bowl and mix in the egg, vanilla extract, and optional lemon extract until smooth and fluffy.
  • Incorporate the cake flour, baking powder, baking soda, and salt gradually, mixing on low speed until just combined.
  • Portion the dough using a cookie scoop (about 1.5 ounces per cookie) and roll each piece into a ball. Place them 2 inches apart on the baking sheet.
