  • 2 tablespoons Olive Oil
  • 1.5 pounds Boneless Skinless Chicken Thighs
  • 4 cups Broccoli Florets
  • 3 tablespoons Unsalted Butter
  • 2 cloves Minced Garlic
  • 1 cup Heavy Whipping Cream
  • 1.5 cups Shredded Cheddar Cheese
  • 0.5 cups Parmesan Cheese optional
  • 1 cup Bacon Pieces

How to Make Low Carb Chicken Casserole with Broccoli and Bacon

  • Preheat oven to 350°F (175°C).
  • Heat olive oil in a skillet over medium-high heat. Add the chicken thighs, seasoning them with salt and pepper. Sauté until they are cooked through and golden brown, about 6-8 minutes.
  • Blanch broccoli in boiling water for about 2-3 minutes until slightly tender. Drain and rinse under cold water to stop the cooking process.
  • Combine chicken and broccoli in a greased 9x13 casserole dish. Spread them out evenly.
  • Melt butter in a saucepan over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.
  • Pour in heavy whipping cream, stirring continuously. Cook until the sauce thickens slightly, about 3-5 minutes, then mix in shredded cheddar and Parmesan until melted.
  • Mix bacon into the cheese sauce, then pour this over the chicken and broccoli. Gently toss to coat.
  • Sprinkle remaining cheddar on top. Bake in the preheated oven for 20 minutes or until bubbly and golden brown.
  • Garnish with extra bacon if desired, and serve hot.
