Ingredients
  

Mackerel

  • 2 whole Mackerels fresh or frozen, cleaned and gutted
  • Salt to taste

Tomato Sauce

  • 2 Tomatoes fresh or canned
  • 1 Onion can substitute with scallions
  • 4 cloves Garlic finely chopped
  • 3 tbsp Ketchup can be omitted for a healthier version
  • 3 tbsp Mustard Dijon works well
  • 100 g Apple Cider Vinegar or Kombucha lemon juice can substitute
  • 1 tbsp Roasted Garlic can swap with sautéed garlic

Vegetables

  • ½ Red Bell Pepper alternative colors are yellow or orange
  • 5 Small Potatoes can use various root vegetables

Seasoning

  • Black Pepper freshly ground
  • 1 tsp Paprika optional, can replace with chili powder

Instructions
 

Preparation

  • Begin by defrosting the mackerel if it’s frozen. Rinse it under cold water, making sure it's clean and gutted. Season lightly with salt and arrange in a baking pan.
  • In a mixing bowl, combine 3 tablespoons of ketchup, 3 tablespoons of mustard, 100g of apple cider vinegar, and both finely chopped and roasted garlic cloves. Stir until the mixture is smooth and well-blended.
  • Slice the tomatoes and onion, and chop the red bell pepper and small potatoes into bite-sized pieces. This will ensure even cooking and allow all the flavors to meld beautifully.
  • In a skillet, sauté the sliced onion over medium heat for about 5 minutes, or until they turn golden brown and sweet. Then, remove it from heat and set aside.
  • Preheat your oven to 420°F (215°C) for a perfect roast.
  • Generously coat the mackerel with the prepared sauce. Sprinkle freshly ground black pepper over the fish, then surround it with the chopped potatoes and red peppers. Top off with the sautéed onions and sliced tomatoes.
  • Cover the baking pan with foil and bake for 40 minutes. During the last 2-3 minutes, remove the foil to achieve a beautiful golden-brown color on the fish.
  • Serve this dish warm, and enjoy any leftovers as they taste just as delightful cold or reheated the next day.

Notes

Optional: Garnish with fresh herbs like parsley for an extra burst of freshness!
