Ingredients
  

  • - 2 tbsp olive oil
  • - 1 small yellow onion diced
  • - 3 garlic cloves minced
  • - ½ tsp red pepper flakes optional
  • - ½ tsp dried oregano
  • - ½ tsp dried thyme
  • - ¼ cup chopped sun-dried tomatoes
  • - 4 cups chicken broth
  • - 1 cup heavy cream
  • - ½ cup grated Parmesan
  • - 2 cups shredded chicken
  • - Salt and pepper to taste
  • - 1 cup fresh spinach optional
  • - Basil or parsley for garnish

Instructions
 

  • Heat oil in large pot. Sauté onion 3–4 mins.
  • Add garlic, spices. Cook 1 min more.
  • Stir in sun-dried tomatoes and broth. Bring to simmer.
  • Add cream, Parmesan, and chicken. Simmer 10–15 mins.
  • Season and stir in spinach if using.
  • Serve hot with fresh herbs and crusty bread.

Notes

- Use rotisserie chicken for convenience
- Add pasta for a heartier version
- Can be lightened with half & half
