Ingredients
  

For the Stir Fry

  • 1.5 pounds Chicken Breast Consider using chicken thighs for added juiciness.
  • 3 cups Fresh Spinach Use frozen spinach—thaw and drain it first.
  • 1.5 cups Cherry Tomatoes Whole or grape tomatoes can be swapped in.
  • 1 large Red Bell Pepper Feel free to use yellow or orange sweet peppers.
  • 1 medium Yellow Squash Zucchini is a great alternative.
  • 4 cloves Garlic Use about 1 teaspoon garlic powder if in a pinch.
  • 3 tablespoons Olive Oil Avocado or vegetable oil can substitute.
  • 1 teaspoon Dried Oregano Basil or thyme can be used as substitutes.
  • 0.5 teaspoon Red Pepper Flakes Omit if you prefer a milder dish.
  • 1 lemon Lemon Zest For a twist, fresh lime juice can be used.

Cooking Steps

  • Pat the chicken breast dry and season with salt, black pepper, and half of the oregano. Let rest for about 5 minutes.
  • In a large skillet, heat olive oil over medium-high heat. Sear chicken for about 5-6 minutes until golden brown; flip and cook for another 3-4 minutes. Remove chicken and keep warm.
  • In the same skillet, add leftover oil and sauté minced garlic for 30 seconds, ensuring it doesn't burn. Then, add diced bell pepper and squash; cook for 4-5 minutes until they soften.
  • Toss in halved cherry tomatoes and cook for an additional 2 minutes. Return chicken to skillet, fold in spinach, remaining oregano, and red pepper flakes. Sauté for 2-3 minutes until spinach wilts.
  • Remove from heat, zest the lemon over the stir fry, and adjust seasoning to taste. Serve hot over rice or couscous.

Notes

Optional to garnish with freshly chopped parsley for added color and flavor.
