For the Vegetables

  • 1 medium Eggplant (Aubergine) slice thinly for quick cooking
  • 1 medium Zucchini (Courgette) both green and yellow varieties work
  • 1 large Sweet Pepper (Bell Pepper) feel free to choose any vibrant color
  • 1 medium Red Onion can substitute with white or yellow onion
  • 200 grams Cherry Tomatoes leave them whole for a stunning presentation
  • 100 grams Spinach fresh spinach is best, avoiding frozen

  • In a bowl, mix together olive oil, garlic, peri-peri seasoning, and salt. Add the mini fillets of chicken and let them marinate for at least 30 minutes.
  • Wash and thinly slice all your vibrant vegetables—eggplant, zucchini, sweet pepper, red onion, and cherry tomatoes.
  • Heat a drizzle of olive oil in a large frying pan over medium-high heat. SautĂ© the marinated chicken pieces until they turn golden brown, about 5-6 minutes. Set aside.
  • In the same pan, add another splash of olive oil and toss in the sliced vegetables in batches, stirring often.
  • Add the cherry tomatoes to the pan and toss until they blister and release their juices. Stir in the fresh spinach until wilted.
  • Return the cooked chicken to the pan, tossing everything together. Serve immediately over your choice of rice, quinoa, or whole grain pasta.

Notes

Garnish with fresh herbs like basil or parsley for a fresher touch. This dish is best enjoyed fresh right after cooking.
