Ingredients
  

For the Filling

  • 2 cups chopped spinach leaves fresh
  • 1/2 cup pitted chopped Greek olives
  • 1 medium finely diced red onion
  • 1 cup diced sweet grape tomatoes
  • 1 cup shredded feta cheese
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon minced Greek oregano

For Cooking

  • 1 tablespoon Greek olive oil for drizzling, optional
  • 2 tablespoons canola oil or butter for frying
  • 4 large flour tortillas

Instructions
 

Preparation

  • In a large bowl, mix together the chopped spinach leaves, pitted Greek olives, finely diced red onion, diced sweet grape tomatoes, feta cheese, mozzarella cheese, and minced Greek oregano. Toss until everything is evenly combined and vibrant.
  • If you're planning an outdoor adventure, place all your ingredients in a ziplock bag and keep it cool.
  • Preheat your grill or frying pan over medium heat and drizzle some cooking oil.

Assembly

  • Lay out the flour tortillas on a flat surface. Spoon equal amounts of the filling onto half of each tortilla.
  • Drizzle a little bit of Greek olive oil over the filling before folding the other half of the tortilla over.
  • Gently fold the tortillas in half over the filling, creating a pocket of deliciousness.

Cooking

  • Cover them with a cooking dome to trap the heat.
  • After about 5 minutes, carefully flip the quesadillas. Cook the second side until it's also golden, about another 5 minutes.

Serving

  • Slice the quesadillas into wedges and serve them warm with your favorite condiments.
  • Serve with a sprinkle of fresh herbs for an elevated touch!

Notes

Allow your quesadillas to sit for a minute after cooking for cleaner cuts during slicing.
