Preparation Steps

  • Prepare Aromatic Base: Begin by adding the sliced yellow onion, minced garlic, fresh thyme, and bay leaves to the bottom of the Instant Pot.
  • Add Corned Beef: Gently position the corned beef brisket, fat-side up, right on top of the aromatics. Sprinkle the seasoning packet evenly over the meat, and pour the lager-style beer around it.
  • Pressure Cook: Secure the lid on the Instant Pot and set it to high pressure, cooking for 80 minutes.
  • Rest the Meat: After cooking, allow the meat to rest in the pot for about 10 minutes.
  • Cook Vegetables: Remove excess liquid from the pot, reserving about 2 cups, then add the small red potatoes, large carrots, and small head of green cabbage. Pour the reserved liquid over the vegetables and pressure cook for an additional 5 minutes.

Optional Serving

  • Serve with a generous dollop of mustard for added zing!
