Ingredients

  • 1/4 cup Melted Butter well-melted for a smooth topping
  • 1 cup Packed Brown Sugar light or dark based on flavor preference
  • 1 can (20 oz) Pineapple Rings in Juice reserve juice for cake batter
  • 1/2 cup Stemless Maraschino Cherries substitute with tart frozen cherries if desired

For the Cake

  • 1 cup All-Purpose Flour can be replaced with gluten-free flour
  • 2 teaspoons Baking Powder
  • 1/4 teaspoon Kosher Salt
  • 1/2 cup Softened Butter remember to soften, not melt
  • 1 cup Granulated Sugar
  • 1 large Egg
  • 1 teaspoon Pure Vanilla Extract
  • 1/2 cup Sour Cream
  • 1/2 cup Pineapple Juice use the juice from your canned pineapple

Cake Preparation

  • In a mixing bowl, combine melted butter and packed brown sugar until well blended. Pour this delightful mixture into a greased cake pan, ensuring an even layer.
  • Carefully place pineapple rings atop the brown sugar mixture, filling any gaps with juicy maraschino cherries for added flair.
  • In a separate bowl, whisk together all-purpose flour, baking powder, and kosher salt. In another bowl, cream the softened butter with granulated and brown sugar until fluffy. Add the egg, vanilla extract, and sour cream, mixing well. Gradually stir in the flour mixture and reserved pineapple juice until the batter is smooth.
  • Pour the batter gently over the pineapple-topping layer, spreading it evenly. Bake the cake in a preheated oven at 350°F for about 50 minutes, or until it’s golden brown and a toothpick inserted comes out clean.
  • Allow the cake to rest for 5 minutes after baking. Then, carefully invert it onto a serving platter for a spectacular reveal of your fruity topping. Let it cool slightly for neat slices.
