  • 0.25 cups Coconut Oil Melted butter can be used as a substitute
  • 0.5 cups Brown Sugar Coconut sugar is a lower glycemic alternative
  • 2 large Eggs Bring to room temperature

How to Make Strawberry Banana Bread

  • Prep Strawberries: Begin by roasting 15 ounces of fresh strawberries in a preheated oven at 400°F for about 15 minutes until they are soft and caramelized; set aside to cool.
  • Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, whole wheat pastry flour, baking soda, and salt until well combined.
  • Stir Wet Ingredients: In another bowl, combine the mashed bananas, Greek yogurt, reserved strawberry juices, vanilla extract, melted coconut oil, brown sugar, honey, and eggs; mix well.
  • Combine Mixtures: Gradually add the dry ingredients to the wet mixture, folding gently until just combined.
  • Bake: Pour the batter into your prepared loaf pans, topping with additional sliced strawberries if desired. Bake at 350°F for 60-70 minutes, or until a toothpick inserted comes out clean.
  • Cool: Once baked, let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
