How to Make Corned Beef Brisket

  • Preheat your oven to 325°F (163°C).
  • Trim the excess fat from the corned beef and rinse it under cold water to remove excess salt. Pat it dry with paper towels.
  • Position the brisket fat side up in a large roasting pan on a rack.
  • In a medium bowl, combine and lightly crush the coriander, allspice, cloves, brown sugar, and black pepper.
  • Rub the spice mixture evenly over the brisket, then add 6 cups of water to the roasting pan and cover tightly with aluminum foil.
  • Roast for 2 hours covered. Uncover and roast for an additional hour until tender and the crust is crisped.
  • Rest the brisket outside the oven for 15 minutes before slicing.
  • Optional: Serve with a side of mustard.

Notes

Leftover corned beef is excellent for sandwiches or hash the next day.
