For the Yogurt Sauce

For the Bowl

  • 1 pound Ground turkey (93% lean) Substitution: Ground chicken or beef.
  • 3 cloves Large garlic cloves (minced) Substitution: Add towards the end of cooking to avoid burning.
  • 1 teaspoon Oregano Substitution: Italian seasoning or thyme.
  • 1/2 teaspoon Red pepper flakes (optional) Substitution: Paprika for milder flavor.
  • 1 cup Grape tomatoes Substitution: Cherry tomatoes or diced larger tomatoes.
  • 1 cup Cucumber (diced) Substitution: Bell pepper for a different crunch.
  • 1/2 cup Red onion (thinly sliced) Substitution: Sweet onion for milder flavor.
  • 1/4 cup Fresh parsley (chopped) Substitution: Mint or cilantro can be used.

  • Whisk together yogurt, lemon juice, garlic powder, dill, salt, and pepper until it’s smooth and creamy. Allow it to rest at room temperature to let the flavors meld beautifully.
  • Measure your rice, mince the garlic, slice the tomatoes, and dice the cucumber and red onion while chopping the parsley. This preps you for a quick assembly later!
  • In a pot, cook the rice according to package directions, typically using a 2:1 water-to-rice ratio. Starting the rice first ensures everything is ready at the same time.
  • In a skillet over medium-high heat, heat olive oil. Add the ground turkey, breaking it apart as it cooks for about 4-5 minutes until it's browned.
  • Once the turkey is nearly cooked through, stir in minced garlic, oregano, salt, pepper, and optional red pepper flakes. Cook for 1-2 minutes until the garlic is fragrant, but not burnt.
  • Divide the fluffy cooked rice into serving bowls. Top with the turkey mixture, then artfully arrange the grape tomatoes, cucumber, and red onion around the turkey. Finish with a sprinkle of parsley on top.
  • Drizzle the tangy yogurt sauce over the assembled bowls, serving them warm for a comforting meal!

Notes
