Ingredients
  

For the Meatloaf

  • 2 lbs Lean Ground Beef (90%-93%) Ground turkey is a great lean substitution.
  • 1 cup Panko Breadcrumbs Use gluten-free breadcrumbs if needed.
  • 0.5 cup Ketchup Can substitute with barbecue sauce.
  • 2 tsp Worcestershire Sauce Soy sauce works as a substitute.
  • 1 tsp Onion Powder Fresh onion can be used instead.
  • 1 tsp Garlic Powder Adjust amount if using fresh garlic.
  • 1 tsp Seasoned Salt Kosher salt with added seasonings is a good alternative.
  • 1 large Egg Can use flax egg for vegan option.

For the Glaze

  • 0.5 cup Ketchup Use this to glaze the top of the meatloaf.

Preparation Steps

  • In a large bowl, combine ground beef, panko breadcrumbs, egg, onion powder, garlic powder, seasoned salt, Worcestershire sauce, and ½ cup of ketchup. Mix gently to avoid overworking the meat for a tender loaf.
  • Divide the mixture into halves and pack them into two loaf pans. Make sure to press them down firmly for an even shape.
  • Add 1.5 cups of water to the Instant Pot and place the trivet inside. Carefully position the loaf pans on top of the trivet, making sure they are stable.
  • Seal the lid, set the vent to 'seal,' and cook on high pressure for 25 minutes.
  • Once the cooking is complete, perform a quick release of the pressure. Wait for the steam to escape completely before opening the lid.
  • Preheat the broiler. Remove the loaf pans, discard any excess drippings, then spread the remaining ketchup on top. Broil for 5 minutes until the glaze is caramelized.
  • Let the meatloaf rest for 5 minutes before slicing. This helps retain moisture and allows for easy serving. Enjoy warm!
