Ingredients
  

  • - 1½ lbs green beans trimmed
  • - 2 tbsp butter
  • - 1 small yellow onion chopped
  • - 2 garlic cloves minced
  • - 8 oz mushrooms sliced
  • - 2 tbsp all-purpose flour
  • - 1 cup broth
  • - 1 cup milk or half-and-half
  • - ½ tsp salt
  • - ¼ tsp pepper
  • - ¼ tsp nutmeg optional
  • - 1½ cups crispy fried onions

Instructions
 

  • Blanch green beans 4–5 minutes. Cool in ice bath and dry.
  • Sauté onion in butter. Add garlic and mushrooms; cook until tender.
  • Stir in flour, then broth and milk. Simmer until thick.
  • Mix beans with sauce in baking dish. Cool if storing.
  • Cover and refrigerate if making ahead. Add onions just before baking.
  • Bake at 375°F for 20–25 mins (25–30 if chilled).

Notes

- Don’t add onions until ready to bake
- Can be frozen for up to 2 months before baking
- Easily doubled for a larger crowd
