Ingredients
  

For the Chili

  • 2 pounds Beef Chuck or beef stew meat as substitute
  • 16 ounces Salsa Verde opt for a full-flavored brand like La Victoria
  • 1 large Onion diced into 1/2-inch pieces
  • 4 cloves Garlic minced or sliced
  • 1 can Green Chiles drained
  • to taste Salt & Black Pepper for seasoning

Optional Toppings

  • 1 medium Sliced Avocado fresh is best
  • 0.5 cup Fresh Cilantro finely chopped
  • 1 cup Mexican Pickled Carrots
  • 8 pieces Warm Tortillas fresh off the griddle

Preparation Steps

  • Cut the beef chuck into 1-2 inch cubes and pat it dry.
  • Dice the onion into 1/2-inch pieces and mince the garlic.
  • Coat the beef evenly with salt and black pepper.
  • Place the seasoned beef in the bottom of your crockpot, then scatter the onions and garlic on top.
  • Pour the salsa verde over the beef, followed by the drained green chiles. Gently stir to distribute evenly.
  • Cover the crockpot and cook on LOW for 8-12 hours, ideally 10 hours.
  • After cooking, remove the beef and shred it with two forks, returning it to the crockpot.
  • Serve warm and add any optional toppings.

Notes

For a cleaner taste, trim excess fat from the beef chuck before cooking. It avoids a greasy sauce. Adjust spice levels with different canned green chiles based on preference.
