Preparation

  • Start the Traeger grill on Smoke with the lid open until the fire is established, which should take about 4 to 5 minutes.
  • Preheat the grill by closing the lid and setting it to 225 degrees F. Let it preheat for 10 minutes.
  • Mix the rub ingredients in a small bowl: combine garlic powder, onion powder, paprika, chili powder, kosher salt, black pepper, and brown sugar.
  • Season the brisket generously on all sides with the rub.
  • Place the brisket on the grill grate, fat side down.
  • Cook the brisket until it reaches an internal temperature of 160 degrees F, which typically takes about 3 to 4 hours.
  • Combine the baste ingredients: in a bowl, mix beer, apple cider vinegar, beef stock, and melted butter.
  • Remove the brisket from the grill when it reaches 160 degrees F.
  • Wrap the brisket in aluminum foil, double-wrapping it snugly, and pour the brisket baste around the meat inside the foil packet.
  • Return the wrapped brisket to the grill and cook until it reaches an internal temperature of 204 degrees F, which should take about 3 to 4 hours more.
  • Remove the brisket from the grill and unwrap it from the foil. Let it rest for 15 minutes.
  • Slice the brisket against the grain and serve.
