Ingredients
  

  • - 1 lb chicken breasts or thighs diced
  • - 2 tbsp olive oil
  • - 1 cup white rice
  • - 1 can 15 oz black beans, drained
  • - 1 cup corn frozen or canned
  • - 1 medium onion diced
  • - 1 bell pepper diced
  • - 1 tsp cumin
  • - 1 tsp chili powder
  • - 1 tsp garlic powder
  • - Salt & pepper to taste
  • - 1.5 cups water or broth
  • - Juice of 1 lime
  • - Fresh cilantro for garnish
  • - Avocado cheese, sour cream, jalapeños (Optional)

Instructions
 

  • Season chicken with spices.
  • Sauté chicken in olive oil for 5–7 minutes.
  • Add onion and bell pepper; cook 3–4 minutes.
  • Stir in rice, beans, and corn.
  • Add water/broth. Cover and simmer for 15–20 minutes.
  • Fluff with fork, add lime juice and cilantro. Serve hot with toppings.

Notes

- Use brown rice for a whole grain version
- Add jalapeños or hot sauce for spice
- Great for leftovers and meal prep
