- For the Peach Filling:
- 5 cups fresh peaches peeled and sliced (6–8 medium peaches)
- ½ cup granulated sugar
- 2 tablespoons arrowroot powder or cornstarch
- ½ teaspoon vanilla extract
- ⅛ teaspoon salt
- Juice of ½ fresh lemon
- For the Crumble Topping:
- ½ cup all-purpose flour
- ½ cup brown sugar packed
- 1 teaspoon ground cinnamon
- ½ cup cold unsalted butter cubed
- ¾ cup old-fashioned rolled oats
Preheat oven to 350°F (175°C). Lightly butter a 2–2.5 quart baking dish.
In a bowl, toss peaches with lemon juice, vanilla, sugar, arrowroot, and salt. Spread evenly in baking dish.
Combine flour, brown sugar, and cinnamon. Cut in cold butter until crumbly. Stir in oats.
Sprinkle topping over peaches and bake 35–45 minutes, until golden and bubbly.
Let cool 10 minutes. Serve warm with vanilla ice cream, if desired.
Use slightly firm peaches for the best texture.
Add ½ cup chopped pecans for a nutty crunch.
