Ingredients
  

  • For the Peach Filling:
  • 5 cups fresh peaches peeled and sliced (6–8 medium peaches)
  • ½ cup granulated sugar
  • 2 tablespoons arrowroot powder or cornstarch
  • ½ teaspoon vanilla extract
  • teaspoon salt
  • Juice of ½ fresh lemon
  • For the Crumble Topping:
  • ½ cup all-purpose flour
  • ½ cup brown sugar packed
  • 1 teaspoon ground cinnamon
  • ½ cup cold unsalted butter cubed
  • ¾ cup old-fashioned rolled oats

Instructions
 

  • Preheat oven to 350°F (175°C). Lightly butter a 2–2.5 quart baking dish.
  • In a bowl, toss peaches with lemon juice, vanilla, sugar, arrowroot, and salt. Spread evenly in baking dish.
  • Combine flour, brown sugar, and cinnamon. Cut in cold butter until crumbly. Stir in oats.
  • Sprinkle topping over peaches and bake 35–45 minutes, until golden and bubbly.
  • Let cool 10 minutes. Serve warm with vanilla ice cream, if desired.

Notes

Use slightly firm peaches for the best texture.
Add ½ cup chopped pecans for a nutty crunch.
Store leftovers in the refrigerator for up to 5 days.
