A sweet and smoky peach salsa made with ripe peaches, chipotle chiles, tomatoes, and fresh herbs. Great as a dip or topping for grilled meats.

Equipment

  • Medium mixing bowl
  • Citrus juicer (optional)
  • Spoon for mixing

Ingredients
  

  • 5 medium ripe tomatoes chopped
  • 1 heaping cup peaches peeled and diced
  • ½ sweet onion finely diced
  • 1 lime juiced
  • ¼ cup fresh cilantro chopped
  • 1 jalapeño seeded and minced
  • 1 small poblano pepper roasted and minced
  • 2 chipotle chiles in adobo seeded and minced
  • 1 teaspoon adobo sauce from chipotle can
  • 1 garlic clove minced
  • 1 teaspoon sugar
  • ½ teaspoon salt
  • ¼ teaspoon apple cider vinegar

Instructions
 

  • Prep all ingredients as listed above.
  • Optional: roast poblano pepper and mince once cooled.
  • In a medium bowl, combine all ingredients.
  • Gently stir to mix everything without crushing the peaches.
  • Cover and chill for at least 30 minutes before serving.

Notes

Best with fresh, ripe but firm peaches.
Adjust heat by reducing jalapeño or chipotle amounts.
Store in fridge up to 5 days in an airtight container.
