Basic Instructions

  • Preheat your oven to 425°F (210°C).
  • In a large bowl, whisk together the all-purpose flour, baking soda, and salt. Rub in the cold butter until it resembles coarse breadcrumbs.
  • In a separate jug, whisk together the egg (if using) and buttermilk.
  • Create a well in your dry ingredients and pour in about 3/4 of the wet mixture. Mix until a soft dough forms, adding more liquid if needed.
  • Turn the dough onto a floured surface and shape it into a round loaf, about 8 inches in diameter.
  • Score a deep cross on top of the loaf and poke holes in the corners.
  • Brush the top with the remaining buttermilk.
  • Bake for 15 minutes at 425°F, then reduce heat to 400°F (200°C) and bake for another 30 minutes.
  • Let the bread cool on a wire rack before slicing.

Notes

Serve warm with a pat of Irish butter and your favorite jam for an extra treat.
