Ingredients
  

  • Dry Ingredients:
  • 1 cup old-fashioned rolled oats
  • 2 tablespoons ground flaxseed
  • ½ teaspoon pumpkin pie spice
  • Pinch of salt
  • Wet Ingredients:
  • ½ cup canned pumpkin purée unsweetened
  • ¼ cup almond butter or peanut butter
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • Optional Add-Ins:
  • 2 tablespoons mini chocolate chips or chopped dark chocolate
  • 1 tablespoon chia seeds
  • Crushed pecans or walnuts

Instructions
 

  • In a mixing bowl, stir together oats, flaxseed, pumpkin pie spice, and salt.
  • Add pumpkin purée, almond butter, maple syrup, and vanilla. Mix until fully combined.
  • Fold in chocolate chips, chia seeds, or nuts (if using).
  • Chill the mixture in the refrigerator for 15–20 minutes.
  • Roll into 1-inch balls using your hands or a cookie scoop.
  • Store in an airtight container in the fridge for up to 7 days or freeze for up to 3 months.

Notes

If the dough is too sticky, chill longer or add more oats.
For a nut-free version, use sunflower seed butter.
Adjust spice levels to taste.
