Ingredients
  

For the Sauce

  • 1/4 cup reduced-sodium soy sauce
  • 2 tablespoons honey maple syrup for vegan option
  • 1 tablespoon toasted sesame oil olive oil as substitute

For the Stir-Fry

  • 2 tablespoons canola oil grape seed oil as alternative
  • 2 cups broccoli substitute with snap peas or green beans
  • 1 medium bell pepper sliced carrots or zucchini can be used
  • 2 cloves garlic cloves or 1/4 tsp garlic powder
  • 1 pound boneless, skinless chicken breast chicken thighs can be used instead
  • 1/2 cup raw cashews can be omitted or replaced
  • 1/2 teaspoon freshly ground black pepper

Directions

  • In a small bowl, whisk together the reduced-sodium soy sauce, honey, and toasted sesame oil until well combined. Set this aside.
  • Heat canola oil in a large skillet over high heat. Add the chopped broccoli, bell pepper, and minced garlic, stirring frequently for about 5 minutes.
  • Toss the diced chicken breast into the skillet. Cook, stirring occasionally, until golden brown and fully cooked through, about 8 minutes.
  • Stir in the raw cashews, then pour the prepared sauce over the chicken and vegetables. Simmer for another 5 minutes until the sauce thickens.
  • Plate the chicken stir-fry over rice or your choice of grain and enjoy!

Notes

Garnish with sliced green onions or sesame seeds if desired. For optimal results, prepare ingredients beforehand and maintain high heat while cooking.
