Ingredients
  

For the Beef Mixture

  • 2 tablespoons extra virgin olive oil for cooking
  • 1 tablespoon harissa paste adjust to taste
  • 1 teaspoon Aleppo pepper flakes or crushed red pepper
  • 1 large yellow onion, finely chopped
  • 3 cloves garlic, finely chopped adjust if desired
  • 1 large green bell pepper, diced
  • 1 teaspoon kosher salt adjust to taste
  • 1 teaspoon freshly ground black pepper to taste
  • 3 tablespoons tomato paste
  • 1/4 cup water or broth for flavor
  • 1.5 pounds lean ground beef or turkey/lamb
  • 1.5 teaspoons baharat optional
  • 1/2 teaspoon smoked Spanish paprika or regular paprika

For the Fresh Toppings

  • 2 medium Roma tomatoes, diced
  • 2 medium Persian cucumbers, diced
  • 4 medium radishes, sliced optional
  • 1/4 cup fresh cilantro or parsley, chopped use one or both
  • 1/2 cup Castelvetrano or kalamata olives, pitted to taste

Grains and Dressings

  • 2 cups cooked whole grains (bulgur, farro, barley, or brown rice) your choice
  • 1/4 cup Tahini Sauce or Creamy Feta Dressing for drizzling

Instructions
 

Preparation

  • In a small skillet, warm 2 tablespoons of extra virgin olive oil over medium heat. Stir in the harissa paste and Aleppo pepper flakes, blending them together. Let it cool while you move on to the next steps.
  • In a large nonstick pan, heat another 2 tablespoons of extra virgin olive oil over medium-high heat. Once shimmering, add the chopped onion, garlic, and diced bell pepper. Season lightly with kosher salt and black pepper, cooking until softened, about 5 minutes. Mix in 3 tablespoons of tomato paste and 1/4 cup of water, stirring well.
  • Add 1 1/2 pounds of lean ground beef to the pan, seasoning with another pinch of salt. Break up the beef as it cooks, stirring regularly, until browned (about 5 to 7 minutes). If there's excess fat, drain before adding 1 1/2 teaspoons of baharat and 1/2 teaspoon of smoked paprika. Cook a few more minutes until fully browned, adjusting seasoning as needed. Remove from heat.
  • In a bowl, gently combine diced Roma tomatoes and Persian cucumbers with a pinch of salt and a drizzle of extra virgin olive oil, allowing the flavors to meld.
  • Divide 2 cups of warm cooked whole grains among serving bowls. Top each with the beef mixture. Drizzle with the harissa oil (if using) and your choice of tahini sauce or creamy feta dressing. Finish with the seasoned vegetables, herbs, and olives. Serve with any leftover sauces on the side for extra flavor.
