How to Make Quick and Easy Pasta Salad

  • Bring a large pot of salted water to a boil. Cook the pasta until tender according to package instructions (about 6-10 minutes). Drain and rinse under cold water to cool it down.
  • In a large bowl, whisk together the red wine vinegar, salt, pepper, oregano, any optional pepperoncini juice, and olive oil.
  • Add the rinsed pasta to the bowl with the dressing and mix thoroughly so the pasta is well coated.
  • Stir in the bell pepper, zucchini, tomatoes, green onions, pepperoncini (if using), olives, parmesan cheese, mozzarella, and herbs (if desired). Combine until everything is well distributed.
  • Adjust the seasoning with more salt and pepper if needed. Serve immediately or let it chill in the refrigerator for at least 30 minutes.

Notes

Rinsing the cooked pasta under cold water prevents stickiness. Allowing the pasta salad to sit in the fridge enhances the taste. It's a great make-ahead option.
