  • 1 tsp Chili Powder Substitute with taco seasoning for a different taste.
  • 1 tsp Salt Reduced-sodium salt can be used if preferred.
  • 1 tsp Garlic Powder Fresh minced garlic can be used for a more intense flavor.
  • 1 tsp Ground Cumin Omit if unavailable; adjust with extra chili powder if desired.
  • 2 cups Cooked Chicken Use rotisserie chicken, leftover grilled chicken, or cooked boneless skinless breasts/thighs.
  • 2 tbsp Olive Oil Can substitute with canola or vegetable oil.
  • 1/2 cup Onion Diced; red or yellow onions work well.
  • 2 count Bell Peppers 1 red, 1 green; finely diced.
  • to taste Hot Sauce Optional, based on preference.
  • 2 tbsp Fresh Cilantro Chopped; substitute with parsley for a different herb taste.
  • 1.5 cups Pepper Jack Cheese Shredded; can substitute cheddar or adjust seasoning.
  • 1 cup Cheddar Cheese Shredded; can use only one type of cheese if preferred.
  • 4 count Whole Wheat Tortillas 8-inch; can substitute with flour or corn tortillas.

How to Make Simple Chicken Quesadillas

  • In a small bowl, whisk together chili powder, salt, garlic powder, and cumin. Set aside half of the mix to sprinkle over the veggies later.
  • Take your cooked chicken and toss it with half of the spice blend, coating each piece nicely for optimal flavor.
  • Heat olive oil in a skillet over medium heat. Add diced onion and bell peppers along with the remaining spice mix. Sauté until the veggies are tender, about 6-8 minutes. Toss in hot sauce and cilantro for that fresh kick.
  • Grab a tortilla and sprinkle cheese on one half. Layer the chicken and veggie mix over the cheese, then top with more cheese before folding the tortilla in half. Repeat for all tortillas to prepare for cooking.
  • In the same skillet, lightly oil the bottom and place each folded quesadilla in. Cook for about 4 minutes on one side until golden brown, then carefully flip and cook for another 2 minutes.
  • Once golden and crispy, slice them into wedges for easy sharing and serve immediately with salsa, guacamole, or sour cream for dipping. Optionally, add fresh lime juice before serving.
