Dressing

  • 2 tablespoons honey
  • 2 tablespoons lime juice freshly squeezed
  • 2 tablespoons extra virgin olive oil quality for best flavor
  • a pinch of salt to enhance flavors

Salad

  • 4 cups watermelon cubed, ripe and juicy
  • 1 cup English cucumber or Hot House cucumber, sliced
  • 1/4 cup fresh mint leaves chopped
  • 1/4 cup fresh basil leaves chopped
  • 1/2 cup feta cheese crumbled

Instructions
 

Preparation

  • In a small bowl, whisk the honey, lime juice, olive oil, and a pinch of salt until combined.
  • In a large bowl or serving platter, gently combine the watermelon cubes, cucumbers, and fresh mint and basil.
  • Pour the honey-lime dressing over the salad, and gently toss to coat.
  • Sprinkle the crumbled feta cheese on top and serve immediately.

Notes

Garnish with extra mint leaves for an appealing touch. Serve immediately for best flavor.
