Preparation Steps

  • Toast the bread slices until golden brown and crispy, about 3-5 minutes.
  • Fry the eggs in a non-stick skillet until desired doneness, approximately 2-3 minutes for sunny-side up or 4-5 minutes for over-hard.
  • Mash the ripe avocado in a small bowl, adding a pinch of salt and black pepper.
  • Slice the tomato.
  • Spread hummus over the toasted bread slices if using.
  • Layer each slice with fresh lettuce, followed by tomato, mashed avocado, and fried egg.
  • Top with remaining slices of bread and slice sandwiches in half.
  • Sprinkle with red pepper flakes or smoked paprika if desired.
