Ingredients
  

  • - 12 oz rigatoni pasta
  • - 1 large head of broccoli cut into florets
  • - 1 lb Italian sausage casings removed
  • - 3 tbsp olive oil
  • - 3 cloves garlic thinly sliced
  • - ¼ tsp red pepper flakes optional
  • - ½ cup reserved pasta water
  • - Salt and black pepper to taste
  • - Grated Parmesan cheese for serving
  • - Lemon zest or juice optional

Instructions
 

  • Cook rigatoni in salted boiling water. Add broccoli during last 2 minutes. Drain and reserve ½ cup pasta water.
  • Brown sausage in a large skillet with 1 tbsp olive oil. Remove and set aside.
  • Add remaining oil and garlic to the skillet. Sauté until golden. Add red pepper flakes if using.
  • Return sausage, broccoli, and pasta to skillet. Add pasta water. Toss to combine and heat through.
  • Season to taste and serve with Parmesan and optional lemon.

Notes

- Swap in any short pasta you have
- Use chicken or turkey sausage for a lighter version
- Add a pinch of nutmeg for depth
