Ingredients
  

  • - 2 medium sweet potatoes peeled and cubed
  • - 1½ tablespoons olive oil
  • - ½ teaspoon kosher salt
  • - ¼ teaspoon black pepper
  • - Optional: ½ teaspoon garlic powder smoked paprika, or cinnamon

Instructions
 

  • Preheat oven to 425°F (220°C). Line a baking sheet with parchment.
  • Peel and cube sweet potatoes into ¾-inch pieces.
  • Toss with olive oil, salt, pepper, and optional seasonings.
  • Spread in a single layer on the baking sheet.
  • Roast for 20–25 minutes, flipping halfway through.
  • Serve hot or store for later.

Notes

- For extra crispiness, don’t crowd the baking sheet.
- Great in tacos, bowls, or as a snack.
- Reheat in oven or air fryer for best texture.
