Ingredients
  

For the Chicken and Sauce

  • 2 tablespoons avocado oil olive oil is a great alternative.

  • 1/3 cup honey agave syrup works for a vegan option.
  • 2 tablespoons sriracha adjust based on spice preference.
  • 3 cloves minced garlic fresh is preferable.
  • 1 teaspoon salt adjust to control sodium intake.
  • 1/2 teaspoon pepper freshly cracked delivers best taste.
  • 1/4 teaspoon cayenne pepper omit if spice-sensitive.
  • 1/2 teaspoon crushed red pepper fresh chilis can be used.

For the Vegetables

  • 1 cup zucchini can substitute with bell peppers or broccoli.
  • 1 cup summer squash will add nutrition and structure.
  • 1 cup shredded carrots sliced sugar snap peas can be used.

For the Bowl Base and Toppings

  • 2 cups cooked rice quinoa or cauliflower rice are great alternatives.
  • 1 piece lime or swap with lemon juice.
  • 1/2 cup plain Greek yogurt can use dairy-free yogurt.
  • 1 tablespoon milk any plant-based milk works.

Instructions
 

Cooking Instructions

  • Preheat the oven to 400°F (200°C).
  • Heat avocado oil in a large cast iron skillet over medium-high heat.
  • Cook the chicken breasts for about 5 minutes on each side until golden brown; remove from the skillet and set aside.
  • Whisk together honey, sriracha, minced garlic, salt, pepper, cayenne, and crushed red pepper in a bowl.
  • Lower the heat and sauté zucchini and summer squash for 1-2 minutes in the same skillet.
  • Layer shredded carrots over the sautéed vegetables; return the chicken on top.
  • Coat the chicken evenly with the hot honey sauce.
  • Bake in the oven for approximately 15 minutes, stirring vegetables halfway.
  • Optional: Broil on high for 3-5 minutes until the sauce caramelizes.
  • Let the dish rest before cubing the chicken and returning it to the sauce.
  • Assemble bowls by layering cooked rice, veggies, chicken, and drizzle with ranch and additional hot honey.
  • Top with avocado slices and fresh lime juice; serve warm.

Notes

For best taste, add fresh avocado and drizzle ranch dressing just before serving.
