How to Make Sausage and Veggies Skillet

  • Heat olive oil in a skillet. Pour 1 tablespoon of olive oil into a cast-iron skillet and set it on medium heat. Let the oil warm up until shimmering, ensuring a perfect sizzle for your ingredients.
  • Cook the sausage. Slice the cooked sausage into coins and add them to the hot skillet. Sauté for about 5 minutes on one side until browned, then flip and cook for another 3 minutes. Once done, remove to a large plate.
  • Sauté the bell pepper. In the same skillet, toss in your diced red bell pepper. Cook for about 4 minutes on medium heat until they're tender and fragrant. If sticking occurs, feel free to add a bit of the reserved oil.
  • Add the zucchini. Now, add sliced zucchini to the skillet, cooking for about 3 minutes. Watch for a tender but firm texture before you proceed to the next step.
  • Combine all ingredients. Slice corn kernels off the cob and mix them into the skillet along with the sausage and bell pepper. Stir everything well, adding a drizzle of reserved oil from the sausage along with the chili powder. Heat on low until everything is warmed through.
  • Garnish with cilantro. Remove from heat and top this beautiful medley with freshly chopped cilantro to add a burst of freshness and flavor.
