Ingredients
  

  • - 12 oz spicy or mild Italian sausage
  • - 1 tbsp olive oil
  • - 1 tbsp Italian seasoning
  • - 1 tsp paprika
  • - 1 large sweet potato peeled and cubed
  • - 5 cloves garlic minced
  • - ¼ tsp red pepper flakes
  • - 1 tbsp tomato paste
  • - 6 cups water or broth
  • - 8 oz three-cheese tortellini
  • - 4 oz baby spinach
  • - ½ cup heavy cream
  • - 4 tbsp fresh thyme
  • - Salt and pepper to taste

Instructions
 

  • In a large pot, heat oil. Add sausage, cook until browned. Drain grease.
  • Stir in seasoning, paprika, sweet potato, garlic, pepper flakes, and tomato paste.
  • Pour in water/broth, bring to boil. Cover and simmer 15 minutes.
  • Add tortellini and cook 10 minutes more.
  • Stir in spinach, then remove from heat and add cream.
  • Season to taste and garnish with thyme.

Notes

- Substitute water with broth if desired
- Add red chili flakes for more spice
- Reheat gently to keep cream smooth
